My honest apologies to all you out there on diets. In fact, I'm on one myself - but I just can't resist the wonderful ways to cook up pumpkin!
This is what I made last night for our weekly sweet treat! It's a pumpkin cake. For those of you who want to try it out, the recipe is below!
This makes a great cake to take places or to giveaway - because it's so obviously made with love :) The pumpkin and oil keeps the cake moist, and the homemade cream cheese icing is like nothing you'd ever find store bought!
Ingredients: 4 egges, 2 cups flour, 2 cup sugar (i use the raw sugar), 2 cups pumpkin, 1 cup vegetable oil, 2 tsp baking powder, 1 tsp baking soda, 3/4 tsp salt, 1/4 tsp cloves, 2 tsp cinnamon
Icing: 8 oz cream cheese, 3/4 stick butter, 2 cups 10x sugar, 1T milk, 1 tsp vanilla
Beat eggs, add sugar and pumpkin. Add dry ingredients and mix well. Add oil and beat for 5 minutes. Bake a 350 for 30 minutes in a 18"x12" pan. Or divide in half into two 9x9 pans. To make the topping, mix the cream cheese, butter, sugar, milk and vanilla until thick and white. Spread onto the cake when cake is cool.
